This exuberant dish is all about uniqueness, flavor, and display! It is marinated in a yogurt-spice mixture, impaled on long metal skewers, and lowered into the tandoor. With this cylindrical clay oven baking, the vegetables or meat is evenly cooked from all the sides and gives the food a grill-like finish.
