Ethiopian Washed Yirgaqcheffe
Presently we are importing harrar which is grown in the eastern highlands. It has medium acidity and full body with a distinctive mocha flavour. Harrar is a dry processed coffee bean, with sorting and processing done almost entirely by hand. More than any other african countries the population consumes 25% of the crop and is a huge positive force in their economy. We use ethiopian beans in blending here at safari also to produce dancing bear and moka java estate and it's ranks at the top in cup quality according to our tastings. If you like eth

Kenya Aa Select
Described as dry and winey like a burgundy this coffee is considered one of the top 5 in the world. Before any coffee is exported it has to undergo testing by the coffee board of kenya. These beans are purchased through mills at the nairobi auctions. Kenya is sold by lots at auction and is graded either aa or ab with aa being the highest. Recently more difficult to source over the years unless willing to pay premium prices we have it! it's medium roasted with a good amount of acidity and snap. If you like kenya try tanzania or ethiopian.

Tanzanian Peaberry Select
When a coffee cherry forms it usually consists of 2 halves formed in each bean. Peaberries occur when only one half develops and are sorted through the milling process. Sometimes called "pearl" coffees they produce an intense taste amplified by the smaller bean. Very high in acidity it represents a bright flavorful cup from africa that is similar to kenyas but not ethiopians. We roast it medium for a bright acidity profile. You might also try kenya if you like this coffee.

Bolivia Caranavi -Nature Friendly
Bolivian coffee is known for its classic and clean taste. Very delicate, very bright with fruity notes this coffee is seasonal so it's not always available. Very limited importing now so we suggest colombian or honduras as a good alternate.

Indian Monsooned Malabar
Indian monsooned malabar is one of a kind for it's unique dry processing void of almost all moisture that other coffees still hold. The beans swell and lose their acidity after they are harvested because of exposure to the monsoon rains and winds. The result is a highly nutty, spicy cup that brews light and mild. You also might enjoy cowboy coffee too.

Cowboy Coffee "Campfire Roast"
Take in the sunrise around the morning campfire with cowboy. . . . . . The very lightest and densest roast profile we can possibly do at 375 degrees. This light colombian is a throw back to the 50's and 60's before dark roasted coffees became popular. Suggested for the old timer who misses how coffee used to taste before dark roasted ruled the coffee shelves. If you like cowboy try Indian malabar, costa rica, chiapas mexico, guatemala or bolivia.

-
French Roast "Serengeti"
Roasted at 425 degrees this oily bean is just a shade less dark than the Italian roast. French roast is a little tricky because if you over roast it you lose the subtler tones and flavors of the beans. Under roast and customer will not get the taste jolt they expect. The irony is French roast has the least amount of caffeine of almost any bean. We use colombians, guatemalas and bolivias for their briskness and personality. Also might enjoy dancing bear, black pearl, continental, sumatra dark and Italian roast.

Kona Coast Island Blend
Coffee was first brought to the island in 1817 but the plantings were unsuccessful. In 1825 chief boki traveling to brazil picked up some coffee plants of the bourbon variety were they eventually thrived off the kona coast. Always expensive because of demand in asia and pests problems like the coffee berry borer we recommend this blend to allow you to enjoy the properties of great kona coffee without the expense. We always take a minimum of pure kona (25%) and blend it with colombian supremos to form a smooth cup that compares very closely to k
