Our diligent, tried-and-true espresso blend that’s been with us from the start. This steadfast blend is designed to produce a big-bodied shot packed with flavour and complexity that can hold its own when combined with milk. While we rotate its component parts depending on the season, its defining feature is a fine balance of dark fruit, swiss chocolate, and nutty tones with medium acidity, tailor-made to stand the test of time.

The stronghold our ode to the dark roast done right. This blend is a chance for our roasters to prove their agility as they take the roast to just before or right up to the second crack – a sweet spot that preserves all of the full-bodied smoothness and caramel tones of a dark roast before crossing into bitter, burnt territory. The composition and roast level changes with the seasons (as with all of our blends), but the roast character will hold steady. For those who crave the w 80 intensity of darker roasts, this one’s for you.

Only recently have producers in Guatemala’s acatenango region processed their coffee cherries locally which has made a significant impact on quality. Julio cap helped make this possible by setting up and managing a mill for local farmers to bring their coffees for processing. This includes his own family farm, don julio where he also oversees the lots of his coffee producing brothers and sisters. This coffee is julio’s selection of the best coffees from his siblings’ lots and is beaming with notes of pecan and vanilla with a creamy mouthfeel.

Producer and direct trade partner, chalo fernandez is well known in specialty coffee circles for his passion, and enthusiasm, spending much of his time visiting roasters or hosting partners at his farm in Colombia. His attention to detail and love for his family, the environment and coffee is evident in his work. He and his family have an idyllic plot of land in the mountainous region of huila and this particular microlot is situated in a more elevated area of chalo's plantation. The kiamugumo factory is operated by the new ngariama farmers cooperative society (f. C. S.). The co-op includes about 1, 500 farmers or farming families who deliver their coffee cherries to the factory as soon as they’re picked. Here the coffees are depulped, fermented and washed before drying on raised beds. The factory is essential to providing the means necessary to incentivize high quality coffee production from the participating small-scale farmer families. Collectively they have produced a sweet and juicy kenyan with nuanced flavours.

Cascara is made by dehydrating the coffee cherry (the coffee fruit). What results is a delicious superfood high in antioxidants and packed with flavour.
