Fusian, a combination of the words “fusion” and “Asian”, introduces the make-your-own sushi concept to Americans. While sushi has long been a staple in the food industry in the United States, it can be intimidating to newbies because of the thought of eating raw fish. With Fusian, customers have more choices in their rolls, from vegetables to steaks.
Zach Weprin, Josh Weprin, and Stephan Harman opened their first Fusian restaurant in Cincinnati in 2010. The trio adopted an aggressive approach in marketing their make-your-own sushi business, from the sleek look in the restaurant to the wide range of sushi ingredients available.
Sushi is obviously an original Japanese food but at Fusian, customers can be as all-American as they want. For example, instead of a seaweed wrap, a soy wrap is available; steak is also a substitute for raw fish and crab. The Fusian prices are affordable so much so that the restaurant usually has students enjoying their personalized sushi.
