Green Teas
Green tea is not oxidized. After being harvested, the leaves are immediately steamed or pan fired to stop the oxidation process. This allows the tealeaves to keep their distinct green color, high levels of antioxidants and delicate vegetal and floral notes. Green tea is processed predominantly in Japan and China with the Japanese tea makers steaming the leaf and the Chinese makers roasting it.
