Ethiopia (Reko)
The reko washing station is named for the nearby mountain and village in the kochere region. The station collects cherry from about 1500 small holders at 15 collection stations in the area. The coffees that contribute to this lot are grown between 1850 and 2100 meters and are a blend of various heirloom varieties that lend to the wild, floral and effervescent characteristics we love from ethiopian coffees. Ethiopia (Larcho Torka)
Managed by lifelong coffee trader abdi jebril, larcho torka coffee goes through a meticulous process: first, it passes through mckinnon depulpers, then moves into washing channels where it loses its mucilage. It then moves into soaking tanks for another 12 hours overnight and is laid on drying beds the next morning for eight to 10 days. Coffee then moves to a warehouse to condition and stabilize before sorting through and selecting only the cleanest coffee. Cascara Coffee Cherry Tea (Finca Santa Lucia)
White grape, cranberry, apple, and canned pear cocktail with floral overtones. Cascara is a dried fruit tea made from the coffee cherry that we love drinking over ice all summer long! In the washed coffee process, the first step is to remove the seed (which is the coffee "bean") from the cherry with a de-pulper. Normally, this skin is considered waste or a byproduct of coffee processing. It is usually composted for use as a natural fertilizer in the farm later in the season. Colombia (El Meridiano)
Intensely sweet, this coffee has a heavy body with notes of light brown sugar, rhubarb syrup, and cherry-orange. The asoceas (asociacion de productores de café especial del alto saldana) has named this coffee el meridiano after a nearby remote mountain lake, visible only from a plane. Asoceas is comprised of 58 producers that are located in a very secluded part of tolima, Colombia. We have purchased this coffee since 2011 and it is always a favorite!
